Curried Crab legs and Dumplings

There’s no shame in my game when it comes on to food. As an unapologetic foodie, I love trying new recipes in my kitchen, my happy place, CreativeAjay’s Kitchen. This weekend, I yielded to my cravings and whipped up a seafood specialty. And I loved it. It was tasty and flavorful and gave me all that I was looking for in a dish. I could not ask for more. And yes, I’m still talking about food here.

I like to call this dish “New Orleans meets the Caribbean,” based on the unique marriage of flavors incorporated. I made a video as well, so you can see the step-by-step of how this is done, at least, Creative Ajay’s way.

For this recipe, you will need:

  • 2 clusters of Dungeness crab legs
  • 2 tablespoons of curry powder
  • About 1/4 cup of cooking oil
  • 1 cup of coconut milk
  • 1.5 cups of hot water
  • garlic (3 cloves chopped)
  • onions (1/4 cup chopped)
  • scallions (1/4 cup chopped)
  • thyme ((1/4 cup chopped)
  • black pepper (1/2 teaspoon)
  • 1 hot pepper
  • 1 tablespoon of Zataran’s crab boil

Directions:

  • Sauté the garlic in hot oil (for about 3 minutes) until the oil becomes fragrant.
  • Remove the garlic, then add the curry powder and let it “burn.” (When it changes color to a brown hue, you know the curry is ready).
  • Sauté the onions for 2 – 3 minutes.
  • Add the coconut milk and let this simmer for 5 minutes. Stir well to combine all the ingredients.
  • Add the water and stir well.
  • Add the black pepper
  • Let this cook for 2 – 3 minutes then add the crab boil.
  • Let this simmer for another 2 minutes then add the scallions, followed by the thyme.
  • After about 2 minutes, add the butter and mix well.
  • After the butter has melted, add the crab legs, followed by the dumplings (that were made ahead of time). The dumplings will help to thicken the sauce.
  • Add a hot pepper, and let everything simmer for 10 minutes on low – medium heat.
  • Serve and enjoy.
