Barbecued Salmon Stuffed Peppers

There's something about juicy bell peppers. There's something even more fascinating about juicy green peppers stuffed with all kinds of goodness, and that's exactly what this concoction is about. An interesting blend of salmon, beans, corn, and rice made these peppers more scrumptious and delightful. Oh taste and see this greatness that I speak of.....Well you can't really taste, but the looks are completely parallel with the taste, and this my friends was just fantabulous.
Yet another way I've found to incorporate salmon in my diet (clearly my go-to seafood). I've already touted the immense benefits of salmon here. Additionally, the benefits of bell peppers, described as the "Christmas ornaments of the vegetable world" are not to be overlooked. These guys are rich in fiber and minerals, and they possess an impressive vitamin profile, some of which are powerful antioxidants. So here you have a meal that's not only bursting with deliciousness, but also nutritious as hell.
What I really relished about this dish was the continuous process of prepping, cooking, baking and mixing, while eagerly anticipating the finished product.
